Heart Healthy Chicken Parmesan


  • ¾ cup Italian breadcrumbs

  • 2 tablespoons grated parmesan cheese

  • ½ teaspoon ground pepper

  • Spray oil

  • 1lb chicken cutlets

  • ¾ cup low sodium marinara sauce

  • ¾ cup low fat mozzarella cheese

  • 4 zucchinis

  • 2 eggs

  • ½ cup whole wheat flour

  • I tbsp chopped garlic

  • ½ tsp. each dried basil and oregano

Steamed Szechwan Alaska Cod


  • 4 Alaska Black Cod fillets (6 to 8-oz. each)fresh, thawed or frozen

  • 2 Tbsp. Szechwan (hot) chili paste

  • 2 Tbsp. rice wine or dry sherry

  • 1 Tbsp. sesame oil

  • 1 c. green onions, cut in long shreds

  • 2 Tbsp. sesame seeds

Heart-Healthy Power Granola Pancakes


  • 1 c. dried tart cherries, chopped

  • 1/3 c. tart cherry juice

  • 2 c. low-fat pancake mix

  • 1/2 c. toasted wheat germ

  • 1 c. granola

  • 1 whole egg

  • 1/4 c. egg substitute

  • 2 c. 1% low-fat milk (or light plain or vanilla soymilk)

  • 1 tsp. almond extract cooking spray

  • 3 Tbsp. sliced almonds
